RECIPE: Cacao crackles

I love puffed buckwheat. This is a great recipe for when I’m craving the crunch and hint of sweetness. Perfect healthy snack replacement for rice crispy treats.

Rice bubble treats are a very popular treat with both kids and adults! However, they contain sugars, trans fats and provided little nutritional benefit. Why not try this healthier and just as easy chocolate version. Sure to be a hit! The best bit is, they’re gluten and dairy free! Enjoy.

SERVING SIZE: Makes approximately 8-10 treats

2 cups puffed buckwheat

¼ cup coconut oil

2 tbs rice malt syrup/liquid stevia/honey/maple syrup (sweetener of choice)

2 tbs cacao/cocoa powder

1 tbs shredded coconut (optional)

Pinch sea salt flakes

1 tbs almond butter (can omit)

Cinnamon

In a bowl add puffed buckwheat and leave aside

Add coconut oil and sweetener of choice in a pot and melt over low/medium heat; stirring often

Add cacao/cocoa powder and allow to dissolve

Once dissolved, take off the stove and pour over puffed buckwheat
