Homemade Pasta Sauce

Ever check the back of a bottle of tomato sauce? It makes a healthy ingredient super unhealthy!

One serving, about a cup, is 224 calories! Give or take. 23 grams of sugar with 7 grams of fat and sodium that’s worth 44% of your daily serving! Convinced yet?

On the other hand, it does take a bit of time and money investment to make your own pasta sauce, but it’s so worth it to be able to eat pasta guilt-free. A blender is a must-have, but such a worthwhile investment! (Also see my hummus recipe).

 

Ingredients:

  • 4 plum tomatoes (1/2 inch chunks)
  • 1/4 cup of diced garlic
  • EV olive oil
  • 2 fresh bay leaves

Instructions:

1. Saute diced garlic in EVOO until brown

2. Toss chopped tomatoes and bay leaves in a pan. Saute and simmer for 3 minutes or until mushy

3. Combine garlic and tomatoes in the blender and blend until even

Final calorie count: ~100 calories, about 2 cups. It’s full of healthy omega-9 fatty acids and oxidation-fighting vitamin C.
